Sugar Cookies with Coffee Icing
Ingredients
FOR THE SUGAR COOKIES:
2-¾ cups All-purpose Flour
1 teaspoon Baking Soda
½ teaspoons Baking Powder
1 cup Butter, Softened
1-½ cup Sugar
1 whole Egg
1 teaspoon Vanilla Extract

FOR THE COFFEE FROSTING:
1-½ teaspoon Instant Coffee
½ teaspoons Cinnamon
1 pinch Salt
½ cups Butter, Softened
⅓ cups Milk
1 teaspoon Vanilla Extract
2-½ cups Confectioner's Sugar
Preparation Instructions
For the sugar cookies:
Preheat oven to 375ºF.
Combine the flour, baking soda, and baking powder (the dry ingredients) into one bowl and mix
until they are all fully incorporated.
In another bowl, add the softened butter and sugar, and cream them together until it is nice and
smooth. To that, add in the egg and vanilla extract and mix until fully incorporated (wet
ingredients).
Add the dry ingredients into the wet ingredients slowly by adding in about a third of the dry
ingredients at a time and mix together, then add the second third, etc. Keep mixing until the
dough becomes a ball.
Portion one-tablespoon-sized balls of cookie dough onto a greased baking sheet and bake in the
oven for 10 minutes.
For the coffee frosting:
In a bowl, combine coffee, cinnamon, salt, butter, milk, and vanilla extract and mix thoroughly.
Then, add in the confectioner’s sugar and mix to thicken the frosting. Keep adding the sugar
until it becomes as thick as you want. For thicker frosting, add more sugar. For thinner
frosting, add less sugar.
Once it’s all mixed, it’s time to frost!
