Today we had a wonderful birthday party for my Aunt Carla and it made it feel like Christmas! My Aunt made an amazing fettuccine with nutmeg and cream cheese in it! It was wonderful! I'm going to make it now that way also whenever i cook :) I'm super excited! I could not find a recipe like the one she used online so i picked around and found my favorite fettucine recipe from Pioneer Woman and then added Cream cheese + Nutmeg to it.
1 pound Fettuccine Noodles
1 stick Butter
1 cup Heavy Cream
Salt and Pepper, to taste
2 cups Freshly Grated Parmesan Cheese
5 oz Cream Cheese
1 t Nutmeg
2 large cloves of garlic
Cook pasta according to package directions.
In a saucepan or skillet, saute garlic and butter. Then add cream, and nutmeg. Warm the cream cheese in a microwave and add some of the cream from, the fettuccine to water it down. Then add to skillet. Season with salt and freshly ground black pepper.
Grate Parmesan cheese and place half of it into a large serving bowl. Pour warm butter/cream mixture over the top.
Drain pasta and immediately pour it into the bowl.
Toss a couple of times, then sprinkle in the other half of the Parmesan.
Toss to combine, thinning with pasta water if necessary.
Serve immediately as a main course or accompaniment to meat or salad.
